From Lake Garda to Valpolicella, from the banks of the Mincio river to the plain south of the chief town of Scaligero: the area of the D.O.C. “Garda” is rather vast and the territory quite varied, brought together however by a long and consolidated wine tradition that has found here a fertile ground suitable for many different vines. It is predominantly hilly terrain, of morainic origin around the Lake, but with lowland areas as well. The D.O.C. “Garda” comprises the entire territory of the municipalities of: Bardolino, Castelnuovo del Garda, Cazzano di Tramigna, Garda, Illasi, Lazise, Mezzane, Montecchia di Crosara, Roncà, Sant’Ambrogio Valpolicella, S. Giovanni Ilarione, San Pietro in Cariano, and Tregnago. as well as parts of the territories of: Affi, Badia Calavena, Brentino Belluno, Bussolengo, Caldiero, Caprino Veronese, Cerro, Cavaion, Colognola ai Colli, Costermano, Dolcė, Fumane, Grezzana, Lavagno, Marano, Monteforte d’Alpone, Negrar, Pastrengo, Pescantina, Peschiera, Rivoli, San Bonifacio, San Martino B.A., San Mauro di Saline, Soave, Sommacampagna, Sona, Torri dei Benaco, Valeggio sul Mincio, Verona, Vestenanuova, and Villafranca. The sub-area “Garda Colli Orientali” is based on a more limited area but one of still considerable dimensions, and which has to comply with further rules.

Caratteristiche e tipologie vino

The D.O.C. “Garda” embraces a wide variety of both red and white wines, some obtained from autochthonous vines and others from varieties that are part of the traditional production of this area. It also provides semi-sparkling and sparkling wines, the latter obtained from Pinot Bianco, Chardonnay and Riesling. The specification Passito must be obtained from the vinification of one or more of the Sauvignon, Riesling and Chardonnay grapes in a proportion of at least 70%. Marzemino, engaged in the same proportion, may also contribute to Passito. The vinification of grapes intended for the production of “Garda” Passito must take place after 15th December, at the end of a process of natural withering. The D.O.C. has also introduced the specification “Vendemmia Tardiva” (late harvest wine) obtained from the vinification of Garganega, Riesling, and Cortese for white berried grapes; Marzemino, Corvina, Barbera and Sangiovese for red berried grapes. In this case, the grapes must have undergone a ripening on the plant to present a minimum natural alcoholic strength no less than 12%, and be harvested no earlier than 5th October for the white-berried grapes, and 15th October for the red-berried ones. The white wine “Garda Colli Orientali” must be obtained from a blend at least 40% composed of Garganega, whilst the red from at least 40% of Corvina grapes. The vinification of grapes intended for the “Garda” Corvina Passito cannot take place before 15th December.

Garganega for whites and Corvina for reds: these are the two vines that characterise the production area of the D.O.C. “Garda”. Widespread in a good part of the province of Verona, the Garganega does not possess a marked aroma but a small legacy of scents of which almond and white flowers are the most clear; it has a very long biological development so as to reach maturation in October; it has a tough and particularly yellow (almost red) skin when it is ripe. It does not have a preponderant acidity, but rather an interesting balance of extracts and sugars. Leaving the grapes to reach full ripening, this variety is capable of producing whites with delicate fruity aromas, in particular of apricot and pear, which become gradually more full-bodied with the progressive aging of the wine. The Corvina is also characterised by its late flowering and for its good resistance to low temperatures. The result is a wine of intense ruby colour, full-bodied and rich in flavours.

GARDA PINOT GRIGIO

Colour: giallo paglierino, talvolta ramato;

Bouquet: intenso, delicato, leggermente aromatico;

Taste: asciutto, armonico, caratteristico, con eventuale percezione gradevole di legno;

GARDA CHARDONNAY

Accompaniments: starters, soft cheeses,soups.

GARDA RIESLING

GARDA PASSITO

Colour: giallo dorato (da uve Sauvignon, Riesling e Chardonnay);

Taste: piacevolmente dolce, vellutato armonico di corpo leggermente aromatico con possibile sentore di legno;

Alcoholic Strength minimum total volume: 15% vol.;

Accompaniments: pasticceria secca e biscotti, formaggi erborinati.

GARDA VENDEMMIA TARDIVA

Colour: giallo intenso tendente al dorato (per uve garganega, riseling, cortese);

Bouquet: marcato, di frutta matura nel prolungarsi dell’invecchiamento;

Taste: vellutato, armonico, ricco, dolce;

Alcoholic Strength minimum total volume: 13,00%

Accompaniments: antipasti, piatti di pesce, risotti, formaggi.

GARDA COLLI ORIENTALI BIANCO

Colour: straw-like yellow, with greenish reflections

Bouquet: vinous, delicately intense

Taste: asciutto, di medio corpo, armonico;

Accompaniments: antipasti, risotti di pesce, frittate, insaccati.

GARDA CABERNET

Colour: more or less intense ruby red, sometimes with violet reflections;

Bouquet: vinoso, gradevole, leggermente erbaceo;

GARDA CABERNET SAUVIGNON

GARDA PINOT NERO

GARDA COLLI ORIENTALI ROSSO

Taste: vellutato di corpo, sapido, armonico con retrogusto leggermente amarognolo;

Alcoholic Strength minimum total volume: 11,00%

Accompaniments: minestre, salumi, formaggi a pasta morbida, secondi piatti.

GARDA PASSITO

Colour: rosso rubino con riflessi granati (da uve marzemino);

Bouquet: dolce e delicato, amabile;

Taste: piacevolmente dolce, vellutato armonico di corpo leggermente aromatico con possibile sentore di legno;

Alcoholic Strength minimum total volume: 15% vol.;

Accompaniments: pasticceria secca e biscotti, formaggi erborinati.

GARDA COLLI ORIENTALI CORVINA PASSITO

Colour: intense ruby red;

Bouquet: dolce e delicato, amabile;

Taste: dolce, armonico con possibile sentore di legno;

Alcoholic Strength minimum total volume: 15% vol.;

Accompaniments: biscotti, pasticceria secca, formaggi.

GARDA VENDEMMIA TARDIVA

Colour: rosso rubino intenso tendente al granato (per marzemino, corvina, barbera, sangiovese);

Bouquet: marcato, con sentori di marasca nel prolungarsi dell’invecchiamento;

Taste: vellutato, armonico, ricco, dolce;

Alcoholic Strength minimum total volume: 13,00%

Accompaniments: risotti, arrosti, formaggi semi duri, stufati.
