More than 2500 hectares of vineyards, 1500 wine enterprises, 21 municipal administrations make D.O.C. “Arcole” one of the most interesting areas to set new production objectives in the context of qualified oenology productions of Veneto. The D.O.C. “Arcole” was founded in September 2000, bringing together an original heritage of history and viticulture to further qualify a territory of great tradition between the provinces of Verona and Vicenza. In the province of Verona the production area comprises of the entire territory of the municipalities of Arcole, Cologna Veneta, Albaredo d’Adige, Zimella, Veronella, Zevio, Belfiore d’Adige and part of the municipalities of Caldiero, San Bonifacio, Soave, Colognola ai Colli, Monteforte d’Alpone, Lavagno, Pressana, Roveredo di Gua’ and San Martino Buon Albergo. In the province of Vicenza, it comprises the entire area of the municipalities of Lonigo, Sarego, Alonte, Orgiano and Sossano. The territory presents itself as uniformly flat in the south-western part, which is a typical characteristic of an alluvial plain, while the hilly area starts with the Motta relief in San Bonifacio and to the east with a part of the Berici mountains. The lands of the plain destined to be used as vineyards are predominantly of a sandy-clay nature. In fact the plain is morphologically varied by the presence of hillocks, terraces and slopes with no more than ten meters of altitude; the soils are deep and sometimes they are equipped with sand, even to a significant degree. The hilly area consists of lands varied in nature, from the red type, which is high in clay, to the white limestone type and there are also those very rich in shells.

ARCOLE CHARDONNAY

Colour: straw-like yellow

Bouquet: refined characteristics, elegang cheeses

Taste: dry, sometimes mellow, velvet, wellbalanced

Alcoholic Strength minimum total volume: 11,00%

Accompaniments: light hors d’oeuvres, soups,asparagus risotto, fish or egg based dishes and aged cheeses.

ARCOLE CHARDONNAY FRIZZANTE

Colour: straw-like yellow tending sometimes to brilliant greenish

Bouquet: characteristic with an intense and delicate aroma

Taste: medium-bodied, well-balanced, slightly bitter

Alcoholic Strength minimum total volume: 10,50%

Serving Temperature: 12° C

Accompaniments: aperitif, with starters, soups,fish based dishes and fresh cheeses

ARCOLE PINOT GRIGIO

Colour: from straw-like yellow to amber, sometimes with copper reflections

Bouquet: delicate, characteristic, fruity

Taste: dry, well-balanced, characteristic

Accompaniments: tomato dishes and fish soups,aperitif, with young cheeses, cold meats, with ham and mortadella

ARCOLE GARGANEGA

Colour: straw-like yellow tending to greenish;

Bouquet: characteristic with an intense and delicate aroma

Taste: dry, slightly bitter, acidic

Alcoholic Strength minimum total volume: 10,50%

Serving Temperature: 12° C

Accompaniments: pasta in broth or pasta, light hors d’oeuvres, Italian-style starters, fish based dishes that may also have a sauce on them.

ARCOLE BIANCO

Colour: straw-like yellow tending to greenish;

Taste: dry, medium-bodied, well-balanced, slightly bitter;

ARCOLE BIANCO SPUMANTE

Colour: more or less intense straw-like yellow

Bouquet: characteristic, slightly fruity

Taste: pungent, characteristic, delicate, in the extra brut, brut, extra dry, dry varieties, palatable and sweet;

Alcoholic Strength minimum total volume: 11,00%

Serving Temperature: 10° C.

Accompaniments: aperitivo, antipasti a base di verdure, pesce, carni bianche, crostacei e molluschi da conchiglia. Primi piatti e secondi piatti a base di pesce, crostacei e molluschi. I tipi di spumante Arcole D.O.C. extra dry, dry, abboccato e dolce sono ottimi da aperitivo, con pasticceria secca, alla frutta e con crema.

Foam: refined and persistent/lingering

ARCOLE BIANCO FRIZZANTE O ARCOLE FRIZZANTE

Colour: giallo paglierino tendente talvolta al verdognolo brillante;

Bouquet: characteristic with an intense and delicate aroma

Taste: medium-bodied, well-balanced, slightly bitter, dry, medium sweet or sweet

Alcoholic Strength minimum total volume: 10,50%

Serving Temperature: 10° C.

Accompaniments: aperitif, starters.

ARCOLE PASSITO

Colour: more or less intense golden yellow

Bouquet: pleasant, intense and fruity

Taste: amiable, sweet, velvety, well-balanced body with a possible woody hint

Alcoholic Strength minimum total volume: 14,50%

Serving Temperature: 12 C.

Accompaniments: dessert, pastries, blue cheeses

ARCOLE MERLOT

Colour: ruby red if young, tending to garnet if aged

Bouquet: fairly intense, characteristic

Taste: dry, slightly bitter, acidic

Alcoholic Strength minimum total volume: 11.5% and 12% in the Reserve version;

Serving Temperature: 18° C.

Accompaniments: all courses. Combines well with both white and light red meats, but also with rich first courses and oily fishes

ARCOLE CABERNET SAUVIGNON

Colour: intense ruby red, tending to garnet when aged;

Bouquet: characteristic, with a more intense aroma if aged;

Taste: dry, well-balanced, austere and velvety if aged;

Alcoholic Strength minimum total volume: 11.5% and 12% in the Reserve version;

Serving Temperature: 18° C.

Accompaniments: roasts and game (hare and deer), pork meats, cotechino (type of Italian sausage), sausage and hard cheeses

ARCOLE CABERNET

Colour: deep red ruby, sometimes tending to garnet

Bouquet: pleasant with a more intense aroma if aged;

Taste: dry, well-balanced, velvety if aged

Alcoholic Strength minimum total volume: 11.5% and 12% in the Reserve version;

Serving Temperature: 18° C.

Accompaniments: boiled meats, raw meats such as carpaccio and tartare, white and red meat roasts

ARCOLE CARMENÈRE

Colour: deep red ruby, sometimes tending to garnet

Bouquet: pleasant and characteristic, with a more intense aroma if aged

Taste: dry, well-balanced, velvety if aged

Accompaniments: red meats, roasts, all types of game, and aged cheeses from the Veneto region

ARCOLE ROSSO

ARCOLE ROSSO FRIZZANTE

Colour: ruby red

ARCOLE NOVELLO

Colour: light ruby red

Bouquet: characteristic intense fruity with a cherry hint;

Taste: Dry, pungent, slightly acidic

Alcoholic Strength minimum total volume: 11,00%

Serving Temperature: 18° C.

Accompaniments: aperitif, but it combines well with all Italian-style starters, pasta with broth, pasta and white meats.

ARCOLE NERO

Colour: intense red with a tendency to garnet with aging;

Bouquet: characteristic, accentuated, delicate

Taste: full, velvety, warm, of a good structure and persistency
